The other night I had Dad come over for dinner.
It was such a lovely night we had a summer night swim and reminisced about past summers.
I decided to make Potatoes, as a side dish, just the way Grandma used to make them.
When I tasted them I realised the retro 'roasties' were so worth the extra trouble.
A bit of a secret family recipe I guess. Not so healthy perhaps, but golden and lovely and full of family nostalgia.
For those of you who don't know how she did them I will break it down for you...
Get yourself some big old dirty potatoes. Not old potatoes actually just big dirty ones - you know what I mean.
Peel them so there is no skin left. I know these days keeping the skin on is better but this is the old fashioned way okay?
Chop them into chunks and place them in a bowl of water with a hearty splash of vinegar in also. Make sure all tatos are covered. This removes the excess starch and stops them discolouring.
Put them in the fridge for a while. Yes, still in the bowl with the water and vinegar.
Peheat oven to about 200 degrees c
Get out a baking tray. MODERNISATION HERE - Line with baking paper!
Put Tatos in first then quite a lot of vegetable oil all over the top.
After about half an hour take them out and spray them with some vinegar and water which you previously put in a little spray bottle. Then spoon the oil over the top of them again.
Return to oven for around another half an hour.
Serve with iodised salt and whatever meal you have cooked. Sorry no photo here. I was overcome with Potato Fever - You all know I am renowned for it so I guess it should be no real surprise.
PS Grandma used to make a little pyramid of salt on the side of her plate instead of salting over the top but I can't say I really think it is a super idea. Maybe you could make a little pyramid of something on the side if you want.
